     Mexican Lentil Soup

Ingredients
1 c. lentils
3/4 c. finely chopped onion, green bell pepper, carrots, celery
1 c. chopped tomato
1/2 c. diced green chilis (fresh roasted or canned)
6 1/2 c. water
1 c. tomatoe sauce
1 Tlbsp salt
1/4 tsp pepper
1 1/2 chili powder
 

Instructions
wash beans, set aside. heat 3 t. oil in deep pot. add onion, green bell pepper, carrots and celery. saute over medium heat until soft.
mix in beans and remaining ingredients. bring to biol reduce heat, cover and simmer 1 hour stirring occasinally to prevent beans from sticking.
