Preheat oven 350. In med bowl combine graham craker crumbs coconut and butter. Press into bottom and sides of 9 inch spring form pan. Bake for 10 min and cool.
Drain pineapple. Beat cream cheese eggs and sugar. Stir in pineapple sour cream rum &coconut extract. Pour into crust. ake at 35 for 5 o 55 min or until set. cool to room temp and then refrigerate. Serve with topping.
Combine topping ingredients and cook till thickened stiring constantly. Cool.
