     Chicken- Spicy Asian Noodles

Ingredients
1 T. dark sesame oil, divided
1 T. grated peeled fresh ginger
2 garlic cloves, minced
2 c. chopped, roasted, skinless, boneless chicken breasts
1/2 c. chopped green onions
1/4 c. chopped fresh cilantro
3 T. soy sauce
2 T. rice vinegar
2 T. hoisin sauce
 
2 tsp. ground fresh chile past
1 (6.75-oz.) package thin rice sticks (rice-flour noodles)
2 T. chopped dry-roasted peanuts
SNOW PEA SIDE DISH
2 c. snow peas
1 c. drained, sliced water chestnuts
2 tsp. canola oil and 2 minced garlic cloves
1 T. soy sauce

Instructions
Heat 2 tsp. oil in small skillet over medium-high heat. Add ginger and garlic to pan; cook 45 seconds, stirring constantly. Place in a large bowl.
Stir into bowl remaining 1 tsp. oil, chicken and next 6 ingredients.
Cook noodles according to package directions. Drain and rinse under cold water; drain. Cut noodles into smaller pieces. Add to bowl; toss well to coat. Sprinkle with peanuts.
FOR SIDE DISH- Heat 2 tsp. canola oil in large nonstick skillet over medium-high. Add 2 minced garlic cloves; saute 15 seconds. Add 2 c. snow peas and 1 c. drained, sliced water chestnuts. Saute 3 minutes or until crisp-tender. Remove from heat; stir in 1 T. soy sauce.
