1 lb pork sausage (I used Jimmy Dean hot sausage) or hamburger
1 med onion, diced
2-3 stalks of celery, diced
1/4 tsp red pepper flakes (optional)
1 14.5 oz can chicken or vegetable broth
1 can cream of celery soup (or cream soup of your choice)
1 C uncooked white rice (regular, not minute rice)
Instructions
Preheat oven to 350. Brown sausage or hamburger in a skillet, add diced onion and celery. Cook until sausage is done and vegetables are soft. Drain if meat is fairly fatty
Spray a 1.5 quart casserole dish with cooking spray. In a separate bowl, whisk soup and broth together. Stir in uncooked rice. Pour into the skillet with the meat and vegetables and stir to mix. Pour into casserole dish and cover TIGHTLY with foil and bake for about 1 hour. Remove from oven and let stand for 5-10 minutes

I double this recipe to fit in a 9x13 pan. You could easily triple it to fit in a 9x13 pan as well
