Preheat oven to 180 degrees Celsius.
In a large bowl mix eggs, sugar, cinnamon and oil.
Peel and slice the apples and add to mixture in
bowl (turning to make sure that apples do not turn
brown).
Mix the bicarbonate of soda with the flour. Add to
ingredients in bowl.
Mix well (best with fork) until all the flour is
absorbed by the wet ingredients.
Pour in a greased 9 x 13 inch loaf tin or two 9
inch round pans.
Bake for approximately 55 minutes.
