     Light and Fluffy Meatballs

Ingredients
Olive oil
1 small onion finely chopped
5 slices bread, crusts removed and torn into piec es
1 cup milk
1pd ground chuck beeg
1pd ground port
1pd ground veal
1pd whole milk ricotta
1/2 cup parm cheese
 
1/3 cup parsley
1 tbsp oregano
2 tsp salt
1/2 tsp pepper

Instructions
Heat olive oil and cook onion until soft, but not colored
Combine bread and milk in bowl and soak 5 minutes. Squeeze excess milk and chop finely.
Mix together onion, milk, and remaining ingredients.
Bake, fry or toss raw into simmering sauce.
