Ingredients
1/2 c pistachio nuts
6 oz baby spinach
2 c arugula ad flat-leaf arsley
4 coarsely chopped scllions
2 cloves garlic
3/4 c olive oil
3/4 c grated asiago cheese
1 t salt
1/2 t black pepper
 

Instructions
Use a large food processor bowl. Add the pistachio nuts, spinach, arugula, parsley, scallions, and garlic. Blend 1 minute.
With processor running, gradually add olive oil until fully incorporated. Place a bowl and stir in cheese, sale, and pepper. Makes 2 1/2 cups (enough for 2 lbs pasta)
