     Sweet Potato Sheperds Pie

Ingredients
1 c dry lentils
3 to 4 lg sweet potatoes peeled and chopped in 3/4 inch cubes
5 carrots peeled and chopped
2 lg onions chopped
2 cloves garlic minced
1/4 c veg broth
2 c fresh green beans
2 tsp tamari
1 tsp dried thyme
 
1/2 tsp sea salt
1/4 tsp pepper
1/2 c unsweetened rice milk

Instructions
In med sauce pan combine 2 c water and 1 c lentils. Bring to boil over high heat then reduce to simmer for 15 min. remove from heat and keep warm.
Boil the sweet potatoes for 10 min till tender. Meanwhile saute carrots onions and garlic in a lg skillet with broth until carrots soften. Add the green beans and cook for 5 min more. Add the lentils tamari thyme salt and pepper. Stir well to combine.
Pour the lentil mixture into a 10 cup casserole dish.
Drain and mash the sweet potatoes and rice milk. top the lentils with the mashed sweet potatoes and bake 30 min. For phase 3 you could use hamburger instead of lentils. And saute the veg in olive oil.
