     Lentil Cauliflower Stew (SC)

Ingredients
400g dried lentils (16 oz)
1 tbl olive oil
1 large onion, chopped
2 garlic cloves
1 lb cauliflower, chopped
1 leek, chopped
2 large carrots, diced
3 celery stalks, diced
2 bay leaves
 
1 tbl fresh thyme, chopped, or 1 tsp dried thyme
2 tsp kosher salt
1 tsp cumin
1/2 tsp cayenne pepper
1/4 tsp black pepper
1 L broth
796ml can diced tomatoes

Instructions
Heat oil in pan over medium heat. Sauté onion for 4 mins until soft. Add chopped garlic and sauté for 1 min.
Pour softened onions and garlic into slow cooker. Add remaining ingredients.
Cook for 6 hours on high or 8 hours on low.
