     Cinnamon Rolls (potatoe)

Ingredients
1 1/3 c. shortening, softened
1 1/2 c. sugar
2 c. mashed potatoes (nothing added)
3 c. warm potatoe water
12 c. flour
4 eggs
3 t. salt
2 pkg yeast
 

Instructions
dissolve yeast in 1/4 c. warm water. Mix shortening, mashed potatoes, potato water, salt, sugar, and eggs. Add yeast and some flour and beat till smooth. Mix in remaining flour and knead on floured board. Let rise till double. Roll dough into rectangle and spread with butter. Sprinkle cinnamon and sugar over rectangle. Roll up; cut 1 inch slices. Place in greased pan. Let rise till double. Bake 20 min at 350 degrees. Ice warm rolls with confectioners icing. These freeze well! It makes A LOT of rolls so may want to half it if you don't have a lot of freezer space!
