     Red Beans and Rice

Ingredients
a. 1/2 lb kidney beans
b. 1/2 chopped onion
b. 1 stalk celery chopped
b. clove of garlic chopped
b. 2 tablespoons olive oil
c. 3 cups chicken broth
c. 3 bay leaves
c. 1/4 to 1/2 teaspoon cayenne powder
c. 1/2 teaspoon thyme
 
c. 1/4 teaspoon sage
c. 2 teaspoons parsley
c. 1 teaspoon cajun seasoning
d. 1/2 lb andouille sausage
e. rice

Instructions
Rinse beans in a pot of water overnight.
Heat oil and add B mixture in large pot. Cook for about 5 minutes.
Rinse beans and add to vegetables. Add the C mixture and bring to a boil. Then simmer for 2.5 hours.
Add sausage to the bean mixture and simmer for another 30 minutes. Serve beans over rice.
Serving Suggestions
Dish is better after staying in fridge overnight!
