     sweet potato peanut soup

Ingredients
2 large sweet potatoes, peeled and cubed 1/2 in
1 lg onion
4 cloves garlic
2 t cumin
2 T ginger, grated
1/2 c peanut butter
1/4 t cayene
14 oz can tomatoes
4 c water
 
optional- cilantro and chopped peanuts
olive oil
Instructions
Saute onion in olive oil. Add garlic and ginger. Add spices.
Add sweet potatoes, tomatoes, peanut butter, and water.Bring to a boil, reduce, then simmer covered until potatoes are cooked, about 20 minutes.
Serving Suggestions
Serve with cilantro and peanuts on top.
