     Habenero Pepper Jelly

Servings   8 1/2 p canning jars

Ingredients
1 1/2 c cider vinegar
6 1/2 c white sugar
1 c shredded carrot
1/2 c minced red bell pepper
15 habeneros deseeded and minced
2 (3oz) pouches of liquid pectin
 

Instructions
Stir the vinegar and the sugar in a medium saucepan over medium high heat until the sugar has dissolved, them stir in red peppers and carrots. Bring to a boil, reduce heat to medium and simmer 5 min longer. Pour in the pectin, and boil for 1 min stirring occasionally. Skim and discard and foam on the jelly.
Sterilize jars and lids. Pour the jelly into hot jars leaving 1/4 in from the top. Clean rims.
Process 5 min in water bath.
