1/2 c panko bread crumbs or ground pecans or almonds
Instructions
In small mixing bowl, combine 2 tsp. olive oil, Dijon and maple syrup and mix well. Place cod
filets on rimmed baking sheet sprayed with non-stick spray. Evenly coat each filet with Dijon
mixture.
In separate small mixing bowl, combine panko/ground nuts, dill, parsley, salt and pepper and mix
to evenly distribute. Pat equal amounts of panko/nut mixture onto tops of fish filets to evenly
coat. Drizzle tops of filets with remaining 2 tsp. olive oil.
Bake @ 375F for 15 - 20 minutes, until crust is lightly golden and center of filets are opaque/just
cooked through. Turn off oven and allow fish to sit in residual heat for 5 min.
Serving
Suggestions
Garnish with fresh chopped dill and parsley if desired.
