     Pickapeppa Sauce

Ingredients
8 oz. chopped roma tomatoes
1/2 large sweet onion, chopped
3T sugar
2T tamarind paste
1/2 c white balsamic vinegar
1 clove garlic
1/2 c raisins
1/2 mango, cubed
1 dried guajillo or chili de arbol chile, stem removed, chopped
 
1 jalapeno pepper, deseeded and chopped
1 tsp. ground ginger
1 tsp. ground allspice
1/2 tsp. cayenne pepper
1/2 tsp. ground cloves
1 - 2 tsp. salt

Instructions
Combine all ingredients in blender and puree thoroughly.
Pour mixture into large sauce pot and bring to boil then reduce to simmer over low heat. Cook for 15 min.
Strain mixture through fine mesh sieve, pressing thoroughly. Discard solids.
Adjust salt as needed.
Serving Suggestions
Will keep refrigerated in tightly sealed container for a month or longer. Can be frozen.
