     Tomatoe-Basil Pasta Sauce

Ingredients
3-4 Large, Ripe Tomatoes (or substitute with 1 can of chopped tomatoes)
2-3 cloves of garlic crushed (remove green middle stems)
4-5 Fresh Basic Leaves (or substitute with dried Basil)
1/3 glass of Merlot, Red Wine
1 small can of tomato paste
Italian Seasoning (approximately 1 teaspoon)
Salt and Pepper
1-2 tablespoons of olive oil
(optional: 1/2 onion, chopped)
 
(optional: 3-4 carrots, finely chopped)

Instructions
Boil water. Place tomatoes individually into boiled water for 10-20 seconds (to soften skin). Remove skin. Place in bowl and mash--unless you're using canned tomatoes. Put aside.
In a pan, roast the garlic (and onion) in olive oil. Add peeled and mashed tomatoes (or canned tomatoes). Add tomato paste (and chopped carrots), and wine.
Add seasonings (Italian, salt, pepper). Finely chop basil and add (last).
Serve over pasta with Parmesan cheese. Buon appetito di un' italiana!
