     Cucumber Herb Salad

Ingredients
2-3 small cucumbers cut into 1/8inch (1/3cm) slices
1/3Cup lightly chopped basil leaves
1/3Cup lightly chopped mint leaves
1/3Cup lightly chopped cilantro
1 thinly sliced red/orange bell pepper - thin enough to flex like a ribbon
1 finely minced large clove of garlic
lime juice to taste
1Tbsp fish sauce
1tsp raw sugar (optional)
 

Instructions
Tools- - Mandolin slicer (for bell pepper) - Large bowl
Steps- 1. Mix together in bowl 2. Eat ;)
It is possible to make this vegetarian by substituting a mushroom broth/soy sauce mixture in place of the fish sauce. If someone tests this theory, please report your results.
