Ingredients
2 ripe, firm avocados
2 tbsp vegetable oil
3 tbsp Tabasco sauce
2 tbsp red wine vinegar
1 tsp coarse ground black pepper
1 clove fresh garlic, minced
1 15-oz can whole kernel corn, drained and rinsed
1 15-oz can black-eyed peas, drained and rinsed
1 15 oz-can black beans, drained and rinsed
 
1 bunch fresh cilantro, chopped
2 medium-sized tomatoes, cubed
1 small red onion, chopped

Instructions
Cut the avocados into half-inch cubes. In a small bowl, mix together the vegetable oil, Tabasco sauce, vinegar, pepper, and garlic. Pour the mixture over the avocados and stir gently to coat. In a large bowl, mix the corn, peas, beans, cilantro, tomatoes, and onion. Add the avocado mixture and gently mix with the other ingredients.
Serving Suggestions
Serve with tortilla chips or crackers.
