     Cauliflower Pizza Crust

Ingredients
1 small to medium sized head of cauliflower - should yield 2 to 3 cups once processed
1/4 tsp kosher salt
1/2 tsp dried basil (crushed more)
1/2 tsp dried oregano (crushed more)
1/2 tsp garlic powder
a few shakes of crushed red pepper (optional)
1/4 Cup shredded parmesan cheese
1/4 Cup mozzarella cheese
1 egg
 
1 Tbsp almond meal (optional)
Pizza sauce
Assorted toppings of choice

Instructions
Tools- Pizza stone or baking sheet -Nonstick cooking spray -Parchment paper -Food processor -Large bowl
Steps- 1.Place pizza stone/baking sheet in oven and preheat to 450° 2.Place parchment paper on cutting board and spray with nonstick cooking oil 3.Wash and thoroughly dry the cauliflower and cut off the florets, discarding the stem 4.Pulse in food processor for about 30 seconds until snow-like 5.Microwave cauliflower covered for 4 minutes 6.Dump cooked cauliflower on clean towel to cool, then wrap in towel and wring it removing as much water as possible 7.Add cauliflower, parmesan, mozzarella, salt, basil, oregano, garlic powder and optional crushed pepper & almond meal to large bowl. Add egg and mix with hands 8.Form dough into crust on parchment paper and slide onto stone/sheet in oven 9.Bake for 8-11 minutes or until golden 10.Add sauce and toppings and bake for 5-7 minutes or until any cheese used is melted, bubbly and slightly golden 11.Allow to cool for two minutes or so
Notes- A head of cauliflower the size of your own head will make 2 pizzas. - It is not recommended to use the almond meal if your yield is closer to 3 cups of cauliflower 'snow' -It is recommended to use 1 egg - 1 egg white if using 3 cups of cauliflower 'snow' -Slices will be floppy but should not crumble -Picture is of crust only -Keto
