Combine lentils and 4 c water in large saucepan. Bring to a boil then simmer over medium heat,
covered, for 20- 30 min., until just beginning to get tender.
Add rice, 1 tsp. salt and 1/2 tsp. pepper to lentils, stirring well to combine. Cover and reduce
heat to low. Simmer for 15 - 20 minutes, until rice has absorbed water. Turn off heat and leave
covered.
While lentils and rice simmer, heat olive oil in large skillet over medium heat. Add onion and
garlic and sauté until onion is lightly browned, about 5 min. Add tomatoes, 1/2 tsp. salt, 1/2 tsp.
pepper, and chile flakes. Simmer over low heat for 15 min.
While onion, tomato mixture cooks, boil macaroni in separate pot with 1/2 tsp. salt until al dente,
about 8 min. Drain.
To serve, combine lentils, rice, and macaroni in large dish, stirring to distribute. Pour tomato and
onion sauce over top.
