Preheat oven to 350 degrees. Grease an 8 inch pan and set aside.
Place mint & 1/2 cup of lemon filling mix into a food processor to
finely chop the mint.
Stir remaining lemon filling mix, water, eggs and lemon filling with
mint together, set aside.

Place crust mix into greased pan and bake for about 8 min. Crust will be pale when
you remove it from the oven
Give the filling a stir and pour it over the hot crust.
Bake for 22 to 28 minutes, or until the center is set.
Allow to cool for 20 minutes or so
Once it's cool, sprinkle with powdered sugar and slice into squares
