First make the special sauce by disolving 1/4 cup
sugar in 1/2 cup water. Add 2Tb soy sauce, 2Tb
rice wine vinegar, 2Tb ketchup, 1 Tb lemon juice,
1/8Tsp of sesame oil, 1Tb hot mustard, and 1-2 Tsp
garlic and red chili paste. Note may want to cut
down the amount of liquid in this....
Saute the chicken - either whole breast or cut into
chunks for faster cooking. When done, cool the
chicken and chop into small chunks.
Prepare the stir fry sauce by mixing 2Tb soy sauce,
2Tb brown sugar and 1/2Tsp rice wine vinegar. Note
may want to double this part of the recipe...
Add more oil to the pan, then add the chicken,
mushrooms, onion, garlic and water chestnuts. Add
the stir fry sauce and saute for a few minutes.
Scoop the mixture into lettuce cups.
