You can put your chicken breasts in a slow cooker for 6 hours with the BBQ sauce, but I didn't have time, so I just cooked them in the oven on 400 for 30 minutes. While your chicken is cooking, chop up the tomatoes, onion, avocado, 3/4 cup cilantro, drain your beans and corn, and put it all in bowl. Then add your salt, sugar, and squeeze one lemon into the mix. Mix it all together and it's kind of like a salsa.
If you put your chicken in a slow cooker, you should be able to shred it, but I just cut mine up into slices. Put as much lettuce on a plate, add the chicken on top, then all of the salsa you want on your salad!
