     Lemon Biscotti

Ingredients
2 7/8 flour
3/4 c sugar
1 1/2 t bp
1/4 t salt
3 T oil
3 T lemon juice
zest of sm lemon
3 eggs
icing
 
1 c p sugar
2 T lemon juice
zest 1/2 lemon zest
optional- chopped walnuts

Instructions
Process- oil, lemon juice, zest and three eggs. Add this to blended dry ingredients. Roll in sugar.....3 rolls. Bake 350 25-30 min in greased pan. Cut diagonally and toast 20 min at 325. I like to leave overnight in oven (turned off!) When cool or next day frost with icing in lines.
