     Banana Walnut Bread

1 1/4 cup all purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
2 large eggs at room temperature
1/2 teaspoon vanilla
1/2 cup butter at room temperature
1 cup sugar
3 very ripe bananas mashed
1/2 cup chopped walnuts

Sift flour, soda and salt in medium bowl. Set aside. Whisk eggs and vanilla together in a liquid measuring cup with a spout, set aside. Lightly brush 9X3X3 inch loaf pan w butter.
Preheat oven to 350 degrees. In a standing mixer fitted with the paddle attachment or with an electric hand held mixer, cream the butter and sugar til light and fluffy.
Gradually pour the egg mixture into the butter while mixing til incorporated. Add bananas and remove the bowl from the mixer. Mix in flour w a rubber spatula just til incorporated. Fold in nuts and pour into prepared pan.
Bake 55 minutes or til toothpick comes out clean.
