     Pad Thai Soup

Ingredients
3 tbsp. oil
2 cloves garlic, minced
1 pkg extra firm tofu, crumbled into bite sized pieces
4 cups veggie broth
4 oz flat rice noodles
3 tbsp. - 2 tsp. soy sauce
1/4 tsp sriracha
1 tsp. lime juice
1/4 cup roasted peanuts, crushed
 
1/4 cup green onions
1 tsp chili flakes
extra peanuts for garnish

Instructions
1) In a large pot or dutch oven, heat the oil. Add the garlic and stir. Add the tofu and cook until lightly fried, about 3 minutes.
2) Add the broth, then add the noodles, soy, sriracha, lime juice, and peanuts. Cook until noodles have softened, about 5-7 minutes.
3) Serve topped with extra peanuts, as well as the green onion and red chili flakes.
