     Texas Smoked Brisket

Ingredients
10lb beef brisket, untrimmed
2Tb brown sugar
1Tb chili powder
2Tb paprika
2Tb kosher salt
1Tb garlic powder
1Tb onion powder
1Tb ground black pepper
1/2Tb cayenne
 
2ts dry mustard
2ts ground cumin
Emeril's BBQ sauce
Mesquite wood chips

Instructions
In a bowl, combine all dry ingredients for the rub. Set the brisket on a large sheet of plastic wrap. Rub the mixture on the brisket and wrap tightly in plastic wrap. Place on baking sheet and let marinate refrigerated for at least 6 hrs or overnight.
Smoke with mesquite wood chips for 6 hrs, then at 225 degrees. Serve with Emeril's BBQ sauce.
Do not foil since the brisket will continue to cook for a long time (even in the refrigerator).
