     Thai Noodle Salad

Ingredients
12 oz of packaged chow Mein noodles
2 boneless, skinless chicken breasts cooked
8 oz. of tiger shrimp (optional)
1 large pepper finely julienned
1/2 a cup of bean sprouts
2 tbsp. finely chopped mint
2 tbsp. finely chopped cilantro
2 tbsp. finely chopped green onion
2 stalks celery, finely sliced
 
1/2 of a 3 oz can of mini corn drained and rinsed
1 tbsp. toasted sesame seeds
1/2 a cup rice vinegar
1/3 maple syrup
1/3 soy sauce
1 tbsp. sesame oil, vegetable oil, fish sauce
1/4 tsp chopped garlic
1/4 tsp salt

Instructions
1. to make dressing mix all dressing together and set aside
2. cook noodles according to package instructions ( about four to five min). Drain and rinse under cold water and pour into bowl with half the sauce
3. add the rest of ingredients to bowl and add remaining sauce and let sit in fridge. keeps well in sealed container for two days
Serving Suggestions
put garlic in microwave for 30 seconds
