1 1/2 tsp. citric acid, 1/2 cup plus 1/4 cup water, 1/2 tablet of vegetarian rennet, 1 cup plain yogurt, 1 gallon whole cows milk, 2 tbs. pickled jalepeno peppers diced, 1 tbs. chili pepper flakes, 1 tbs. coarse or cracked pepper, 2 tsp. flake salt......Dissolve the citric acid in 1/2 cup water, dissolve the rennet in 1/4 cup water. Pour milk in a large heavy bottomed pot. Stir the one cup of yogurt so it incorporate more easily with the milk, then add to the pot of milk and whisk until its all blended in. Add citric acid solution and heat the milk on medium to 90F. Add rennet solution. Mix well. Then without stirring continue heating to 105F. Lower heat and use spoon to cut any large clumps of curd. Slowly move pieces around the pot to help shrink them as they cook in the warm whey. Scoop curds into microwavable bowl. Drain any visible whey. Microwave the curds for one minute. Again drain the whey out.

Microwave again for 30 seconds. Drain whey immediately and sprinkle the peppers, pepper flakes, black pepper and salt. Shape into a rectangle or square and wrap in parchment paper so it keeps its shape. Cool down and its ready to eat. I warn again..its very, very hot and spicy!
