Calamari cooked in Anisette-
Clean and chop 3 lb. calamari in small pieces. Sauté 4 cloves
crushed garlic in some olive oil. Add 3 large chopped onions and
cook on low heat for about 10 minutes mixing it frequently so it
doesn't burn. Add chopped calamari, salt and pepper to taste and 2
tsp. dried basil, 1 cup chopped fresh basil and 1 1/2 cups anisette.
Cook on very low heat for about 2 hours. Serve over pasta such as
linguine or
spaghetti or with any vegetable you like. You can add additional
chopped fresh basil before serving.
