Fresh Homemade Cheese- Dissolve 1 1/2 tsp. of citric acid with1/4 cup of warm water. Put in a large heavy bottomed pot. Add one gallon of milk and heat on low heat until temperate reach 90 degrees. Remove from burner and add 1/4 tsp. liquid vegetable rennet combined with 1 cup of warm water. Mix well with the milk mixture. Cover and leave for 10 minutes. You should get a custard like mixture. Cut the curds with a knife and continue heating on low heat until the temperature reaches 105 degrees. It takes about 5 minutes. Lift the curds up with a slotted spoon and put in a microwavable bowl. Drain any whey you can see. Add 1 tbs. salt flakes and mix it in. Microwave for 1 minute and drain whey again. Microwave again for 30 seconds and drain the extra whey again. Your cheese is ready now. You can shape into a ball or put in a mold. Once its cooled down its ready to eat. The whey can be reserved to make fruit smoothies. It is very rich in protein.
