     Baked Rice Balls

Ingredients
2 cups rice cooked al dente
4 tbs. olive oil
3 cloves garlic finely chopped
1 lb. extra lean pork minced meat
4 tbs. tomato paste dissolved in 1 1/2 cups of water
1 cup frozen peas (optional)
Salt and pepper
6 eggs
1 packet or 8 oz. farmers cheese/mozzarella/gbejniet
 
Italian seasoned bread crumbs
4 slices bacon (optional)
1 cup parmesan cheese
1/4 cup chopped parsley.

Instructions
Saute the garlic in the olive oil until soft for about 5 minutes, add minced meat and cook breaking with wooden spoon to prevent it from sticking to each other. Cook until meat is no longer pink. Add the dissolved tomato paste, salt and pepper and some mixed spice. Add the frozen peas if desired. Cover and simmer for about 30 minutes. When rice is ready drain water and add the grated cheese and the parsley. Add the sauce and mix together. Whisk the eggs in another bowl and add the farmers cheese, add egg mixture to the rice mixture and mix together.
If its too watery add a little more gated cheese. Form into balls and cover with bread crumbs. I made some with a slice of bacon around it and some plain…it all depends on taste. From this mixture I made 10 rice balls and the rest I made a dish of baked rice, so if you don't need so much just do half the ingredients. Put I always make more so I have some for the freezer. Bake the rice balls in a preheated oven at 350 for about 30 minutes or until golden in color.
