4 medium apples, peeled and chopped (johnagold, honeycrisp, gala, pink lady all work w
juice of one lemon
Coconut oil/spray
8 eggs
2 3/4 c almond meal
3/4 c sugar plus 1T for sprinkling
2 tsp. cinnamon
1 pint heavy cream, chilled
1 vanilla bean pod, split and seeds removed
1 tsp. ground cardamom
2T sugar
thinly sliced fresh apples, peeled, sliced and tossed in lemon juice - for top of cake
1/2 c sliced almonds for top of cake
honey for drizzling (optional)
Instructions
In medium sauce pot, combine apples, lemon juice, a pinch of salt and 3/4c sugar and bring to a boil over medium heat. Reduce heat to low, cover pot and simmer for 10 - 15 minutes until apples have released their juices and softened and cooked down. Remove from heat and allow to cool for 10 min. (You can skip this step
and use good quality prepared applesauce - you will need about 1
1/2 c)
Grease a 9 inch springform pan with coconut oil and line bottom
with parchment paper also greased with oil.
In blender, combine eggs, cooled apple mixture/applesauce,
vanilla, cinnamon and almond meal. Blend to fully
combine. Batter should be smooth and thick, but still pourable.
Pour batter into prepared springform pan, using spatula to remove
all batter from blender. Top batter with almonds and sliced
apples. Sprinkle with 1T sugar and additional cinnamon if desired. Bake in pre-heated 325F oven for 40 - 50 minutes. Check to
see if center of cake is set by gently shaking pan. Turn off heat
and allow cake to sit in oven for 10 minutes in residual heat if
set. Continue to bake at 350F for 5 - 10 minutes if not set.
Cracks will form along top of cake when done.
Cool cake for minimum of 1 hour and remove sides of pan (using
knife along edges before removing cake pan from spring form to
loosen). Cake can be refrigerated for up to a week.
To prepare whipped cream- Pour chilled heavy cream into a large
mixing bowl and beat with electric mixer on high speed until soft
peaks form. Add 2T sugar, vanilla bean seeds from pod and ground
cardamom. Continue to beat on high speed with mixer until desired
consistency/thickness is achieved.
