     French Remoulade

Ingredients
1 c good quality mayonnaise
2T dijon mustard
2T capers, rinsed, minced fine
2T cornichons, chopped fine
2 tsp. anchovy paste (optional) - can sub. nutritional yeast
2T tarragon, minced
2T flat leaf parsley, minced
1 tsp. dried dill weed, chervil or marjoram
1T lemon juice
 
2 tsp. lemon zest
1/2 tsp. fleur de sel

Instructions
In medium mixing bowl, combine all ingredients and stir well with rubber spatula. Allow to sit for a minimum of 10 minutes to allow flavors to combine.
Serving Suggestions
traditionally served as dressing for shredded celery root or carrots or with potato salad. Can also be served with fish or seafood.
