     Coconut Curd

Ingredients
5 egg yolks
3/4 C. sugar
4 ounces of unsalted butter
1 1/4 C. Coconut milk or cream
1 Tbl lime rind ground fine
1/3 C. lime juice
1 tsp coconut extract
 

Instructions
Step one- separate eggs and whisk until smooth, add sugar and cook over medium heat until the sugar has melted.
Step two- Add butter until melted and smooth. Add lime rind and juice. Add coconut cream or milk and cook until thick, approx. 45 minutes, stir constantly. It's finished when it will coat the back of a spoon and not run off. Add extract.
Step three- pour in sterile jars and refrigerate for a month.
Serving Suggestions
I just it as a filler for an angel food cake or on toast.
