4 1/2 lbs. chicken wings, separated at joints, tips discarded
2 quarts vegetable oil for frying
Instructions
In a large bowl, mix honey, juice, zest, garlic, 1/2 t. salt, and pepper.
Put flour and remaining 1/2 t. salt in a zip-top plastic bag. Pat wings dry, add to bag, and shake to coat.
Preheat oven to 200 degrees and line a baking pan with aluminum foil.
In a 4.5 to 5 quart heavy pot, heat oil to 360 degrees. Fry wings in batches of 8 until golden, about 7 mins per batch (bring oil back to 360 degrees between batches.) Drain wings on paper towels, transfer to prepared baking pan, and keep warm in oven. Put cooked wings in honey mixture and toss to coat well.
