     Italian Cream Cheese Cake

Ingredients
2 cups sugar
1 stick butter
1/2 cup vegetable shortening
5 eggs, seperated
2 cups flour
1 tspn baking soda
1 cup buttermilk
1 cup crushed pecans
1 tspn vanilla extract
 
1 cup coconut
Ingredients for Frosting
1 stick butter
8 oz pkg cream cheese
1 lb powdered sugar
crushed pecans
whole pecans (optional)

Instructions
Mix sugar, butter, and vegetable shortening. Add egg yolks and mix until creamy. Slowly add flour and baking soda. Add remaining ingredients (buttermilk, pecans, vanilla, coconut).
In a separate bowl, whip egg whites until stiff and then fold into cake mixture. Pour into 2 8-in or 9-in greased and floured round cake pans, or one 13 x 9 cake pan. Bake for 30 minutes at 350 degrees.
For frosting- Mix ingredients and spread on cooled cake. Sprinkle whole pecans over frosting if desired.
