1- 9 oz gram cracker pie crust or regular pie crust
2 Large egg yolks, slightly beaten
8 cups sliced; cored, peeled cooking apples
1 1/2 Tablespoon lemon juice
2/3 cup of sugar
1/3 cup Light brown sugar Firmly packed
1/4 cup All purpose flour
1/4 tsp. salt
3/4 tsp. cinnamon
1/4 tsp nutmeg
Omit lemon juice if apples are very tart
Topping
1 cup flour
1/3 cup sugar
1/3 cup light brown sugar firmly packed
1/2 cup butter or margarine, at room temperature
Instructions
Preheat oven to 375 degrees, brush bottom and sides
of crust with egg yolk; bake on baking sheet until
light brown about 5 min. Remove crust from oven.
Reduce oven heat to 350 degrees.
Combine sliced apples, lemon juice 2/3 cup of sugar 1/3 cup brown
sugar, 1/4 cup flour, salt, cinnamon and nutmeg, mix
well (i don't like nutmeg) and spoon int crust.
Combine topping mix flour, sugar, brown sugar and
butter with fork or pastry blender until crumbly.
Sprinkle topping mixture evenly over apples. Bake
on baking sheet until topping is golden and
filling is bubbling, about 55 minutes, cool on
wire rack about 4 hours
