1 package Brown & Serve Hickory Smoked Pork Sausage
1 can diced potatoes, drained
3-4 mini sweet peppers, sliced
1 large onion, sliced
3 Tablespoons olive oil, divided
Salt & pepper to taste
1 container Grape tomatoes, sliced in half
Instructions
Preheat oven to 350 degrees. Line a 9x13 baking dish with foil and brush one teaspoon of the oil over the foil. Set aside. Chop the sausage links into bite size pieces. In a large bowl, combine the sausage, potatoes, peppers, onion & tomatoes with remaining oil. Toss to combine. Spread out evenly in baking dish. Cover with foil and bake for 30 minutes.
