     Chicken Parmigiana

Ingredients
1 cup flour
2 large eggs
Two 5 ounce chicken breasts pounded to 1/4 inch thick
salt
black pepper
1/2 cup vegetable oil
2 cups marinara sauce
5 or 6 1/4 inch-thick slices mozzarella
2 tablespoons grated romano cheese
 

Instructions
Preheat 450 degrees. Put flour in one bowl. Put egg and whisk in another bowl. Put bread crumbs in another bowl. Season the chicken with salt and pepper. Cover chicken with flour from flour bowl. Shake off excess. Cover chicken in egg from egg bowl. Let any excess drip off. Cover chicken with bread crumbs in bread crumbs bowl. Cover both sides of cutlets with bread crumbs.
In large saute pan, heat the oil over medium heat. When oil is hot, add the chicken and cook for about 3 min on each side or until they are a deep golden brown all over. M Transfer to paper towels to drain.
Heat marinara sauce until hot. Transfer the chicken to a shallow ovenproof casserole dish. Place the mozzarella on top of chicken and sprinkle it with the grated cheese. Transfer the cutlets to the oven and cook for about 3-4 minutes or until the cheese is melted. Ladle sauce onto a large platter and place cutlets on top of the sauce and serve.
