     Armadillo Eggs

Ingredients
1/2 lb. bulk hot sausage
1 lb. Monterey Jack cheese
1 1/2 c. buttermilk biscuit mix
1 medium can whole jalapeno peppers
1 egg, whisked with fork
1 package Shake N Bake for Pork
 

Instructions
Preheat oven to 325 degrees.
Grate 1/2 Monterey Jack cheese, set remainder aside. Mix grated cheese and other ingredients together by hand; will form a stiff dough.
Slit jalapeno peppers lengthwise, removing seeds. Cut remaining cheese into chunks to fit in jalapeno halves, and place a chunk in each jalapeno half.
Form a flat pancake out of dough, large enough to cover each jalapeno, and seal. Roll to make an egg shape. Roll each jalapeno in shake n bake, roll in egg, and roll in shake n bake again. Place on a sprayed baking sheet, or one covered in parchment paper, and bake for 20-25 minutes or until golden brown.
Serving Suggestions
These armadillo eggs are best served warm.
