     Chili Oil Salsa

Ingredients
3 to 5 small dried arbol chili's (stems removed)
1/4 cup peanut or safflower oil
1 garlic clove
salt to taste
 

Instructions
Heat the oil in a small sauce pan over medium-high or high heat until it starts to smoke. Remove pan from the heat. Add the dried chili's to hot oil, stir chili's around in the oil until they start to turn color. Pour into a glass blender cup along with the garlic clove. Blend thorooughly, add salt to taste. Serve immediately or leave the oil for a day to allow flavors to blend.

Goes great with pozole
