Beat eggs in a bowl, add 3/4 of the tomatoes and
the onions, peppers, red pepper flakes, chopped
cilantro, salt and pepper. Pour into buttered
skillet, stir until cooked through. When almost
finished, top with the cheese. Let the cheese melt.
Slide the scramble onto a plate and top with the
remainder of the fresh tomatoes, some chopped
cilantro, salt, pepper.

Top off with a dollop of sour cream and garnish with fresh parsley.
