     Pork Roast with Spicy Orange Glaze & Black Beans

Ingredients
3 lb boneless pork loin roast
1 tsp salt
1/2 tsp pepper
1 onion, chopped
2 cloves garlic, minced
14 oz can diced tomatoes
2, 15 oz cans black beans, drained and rinsed
1/4 cup orange juice
1/4 cup apricot spread
 
1/4-1/2 tsp cayenne pepper

Instructions
Season pork with salt and pepper. Heat a large nonstick skillet over medium high heat. Add pork. Cook 6-8 minutes, browning all sides. Remove to slow cooker.
Add onion to hot pan. Cook, sitrring, 2-3 minutes until just browned. Add garlic. Cook 30 seconds. Stir in tomatoes, scraping up browned bits. Pour over pork.
Pour beans around pork. Cover. Cook on high 1.75 hours. Remove to cutting board. Cover with foil. Let stand 15 minutes.
Boil orange juice and apricot spread in a small saucepan over medium high heat until reduced by half, 3-5 minutes. Remove from heat and stir in red pepper. Brush over pork before slicing. Serve with beans.
