1 C BROWN SUGAR
1 C SOFTENED MARGARINE
2 EGGS
2 t VANILLA
4 C. FLOUR
1/2 t SALT`
1/2 t BAKING POWDER
1/2 t BAKING SODA
 
1 C CRUSHED PINEAPPLE SLIGHTLY DRAINED
2 STICKS SOFTENED MARGARINE
1 C CRISCO
2 C SUGAR
4 t FLOUR
1 1/2 C WARM MILK
5 BAGS MARSHMALLOW
3 BAGS COCONUT

Instructions
CREAM SUGAR,BROWN SUGAR, AND MARGARINE IN LARGE BOWL. ADD EGGS AND VANILLA MIX WELL. MIX FLOUR,SALT,BAKING POWDER AND BAKING SODA ADD TO CREAMED MIXTURE. STIR IN PINEAPPLE.
DROP BY SCANT TEASPOON ON GREASED SHEET. BAKE AT 350 FOR 10 MIN TILL LIGHTLY BROWN ON BOTTOM. CUT THIN SLICE OFF TOP OF MARSHMALLOW PUT CUT SIDE DOWN ON TOP OF COOKIE AS IT COMES OUT OF OVEN. COOL COMPLETELY.
ICE COOKIE INTO PEAK AND COVER WITH COCONUT.PUT IN PAPER CUPS.
ICING- CREAM MARGARINE, CRISCO, SUGAR AND FLOUR BEAT TILL LIGHT AND FLUFFLY. SLOWLY ADD WARM MILK AND BEAT TILL IT DOUBLES IN VOLUME
