meat sauce (leftover spaghetti sauce is PERFECT or get a large jar)
3 cups fresh ricotta cheese
1/2 cup grated parmesan cheese
1 pound mozzarella cheese, sliced
2 eggs
2 tsp parsley flakes
1 10 oz package of lasagna noodles
Instructions
Cook lasagna noodles. Drain, rinse in cold water, pat dry, and
lay flat on wax paper. Beat eggs and add ricotta, grated
parmesan, and parsley.
Spray the bottom and side of a 9 x 12 pan or glass dish lightly
with Pam. Layer half the noodles on the bottom. Spread half
the ricotta filling over the noodles, then half of the mozzarella
slices, then half of the meat sauce. Repeat.
Bake at 375 degrees for 30 minutes (or assemble early,
refrigerate, and bake for 45 minutes). Let stand 10 minutes
before cutting.
