     Pork Chops with Peach stuffin or Chicken Breast

Ingredients
4 butterfly pork chops
1 Large onion, diced
2 celery stalks, diced
1 Tablespoon oil
1 can peaches in heavy syrup, drained
1/2 cup herb seasoned stuffin mix
1/4 teaspoon fresh ground ginger
3 Tablespoons orange marmalade
2 Tablespoons apple cider vinegar
 
1 Tablespoon minced garlic

Instructions
Preheat oven to 375 degrees. In a large skillet saute the onions, garlic & celery in the oil until soft. Remove from heat source to cool enough to handle. Stir in peaches & stuffing mix. In a small mixing bowl whisk the ginger, vinegar & marmalade. Set aside. Take each chop or breast and spoon on about 2 heaping tablespoonfuls of peach mixture. Spread to cover meat then carefully roll & secure with toothpick. Place each piece of meat in a 9x13 ungreased baking dish. Drizzle each with the marmalade mixture. Bake for 1 hour. REMEMBER TO REMOVE TOOTHPICKS before serving!!
You can also use 4 boneless skinless chicken breasts that have been slightly pounded down.
