     Roasted Vegetable Spread

Servings   1 3/4 cups

Ingredients
1 red bell pepper, sliced
1 med onion, sliced
4 cloves garlic
1 sm zucchini, sliced
1 Tbsp olive oil
8 oz cream cheese, softened
salt and pepper to taste
 

Instructions
Preheat oven to 400 degrees. Toss all veggies with olive oil and place on baking sheet lined with foil.
Roast until soft and turning brown (approx 45 min), tossing occasionally. Cool completely.
Blend roasted veggies with softened cream cheese in food processor until smooth.
Serving Suggestions
Serve with bread, pita chips, or raw vegetables.
