1 can {14.5 oz.} fire roasted diced tomatoes, drained
2 tsp. chopped fresh oregano leaves
1/4 tsp. kosher salt
1/4 tsp. pepper
3/4 cup shredded mozzarella
Instructions
Cook pasta. Remove sausage from casing. Brown meat, garlic, and
onion until meat is cooked through and crumbly.
Meanwhile, chop zucchini & oregano.
Once meat is cooked, stir in the zucchini and cook for 2 minutes.
Then toss in the tomato sauce, tomatoes, oregano, salt, and pepper.
Heat on medium high heat until boiling.
Drain the ziti and add it to the tomato/sausage mix. Toss to coat
and transfer to a 13x9 baking dish. Sprinkle with mozzarella. I
know the recipe called for 3/4 cup, but we might have used A LOT
more than that!! Cover the dish tightly with foil and bake for 20
minutes at 375.
