     Southwestern Eggs-in-a-pan Casserole

Ingredients
1lb sausage (spicy as you like it) crumbled
1 large onion chopped
6 ounces mushrooms sliced (1 cup)
1 C drained fresh salsa
1 C sour Cream
6 large Eggs
1 C shredded Cheddar Cheese
Salt & Freshly ground Pepper
3 T Cilantro, chopped
 

Instructions
Brown sausage in large skillet about 5 minutes. Add onion and cook for 5 more minutes. Add mushrooms cook for an additional 5 minutes. Blend salsa & sour cream together. Add to sausage mixture. Bring mixture to a simmer, then crack 6 eggs on top. Cover pan and cook on low heat for 8 minutes ( till eggs are solid). Add shredded cheese. Replace cover cook for 4 minutes more (melted cheese). Season with salt & pepper, sprinkle with cilantro and serve.I put left overs in the fridge and heat them in the microwave for future meals. Keeps nicely.
